Corn with Garlic and Chives  


Serves: 2
2-3 Carrots, washed (& peeled, if you prefer)
1-2 apples, to taste
Juice of 1/2 lemon
1/2 cup raisins (optional-try white raisins)


Grate carrots, coarse or fine (or maybe a bit of both for texture?) into a bowl.
Core & peel apple(s). You can either grate the apple in with the carrots, or cut
into small chunks, depending on preferences. Add lemon juice and raisins, if using,
and mix well. We used to love this as kids.
